Papaya Lassi Recipe

1 cup ripe papaya, diced and mashed well
1 cup plain yogurt
2 cups chilled water
2 tablespoons lime juice (optional)
Few  mint leaves
Ice cubes
A luxurious addition - a dollop of vanilla ice cream
(add 2 teaspoon of sugar, in case you aren't on a diet)

Use a hand blender to beat or blend yogurt and sugar, then add water and beat again. Add mashed papaya with all the seasonings. Add a dollop of vanilla ice cream in the glass and pour the lassi over it. Garnish with mint and serve cold.

Nice round up there Nags. This fruit has never been a favorite of mine but some of these recipes are rather tempting. It reminded me of this super papaya halwa that my periamma once made... the only papaya thing I've liked so far..
