Papaya Lassi Recipe

1 cup ripe papaya, diced and mashed well
1 cup plain yogurt
2 cups chilled water
2 tablespoons lime juice (optional)
Few  mint leaves
Ice cubes
A luxurious addition - a dollop of vanilla ice cream
(add 2 teaspoon of sugar, in case you aren't on a diet)

Use a hand blender to beat or blend yogurt and sugar, then add water and beat again. Add mashed papaya with all the seasonings. Add a dollop of vanilla ice cream in the glass and pour the lassi over it. Garnish with mint and serve cold.

Great round-up Nags. Too bad that I couldn't contribute to this also. But you have done an excellent job of hosting this. Otherwise people like me would not have known that we can do so many dishes with Papaya.
